WELCOME
Chris Seal is Professor of Food & Human Nutrition, and leader of the Food Quality and Health research group in the School of Agriculture, Food & Rural Development, Newcastle University. He is Co-Director of the University’s Human Nutrition Research Centre. His current research interests include physiological and behavioural responses to foods, and factors which affect food quality. A particular focus is promoting the adoption of healthy diets based on increased consumption of wholegrain foods; understanding their health benefits, antioxidant properties and the development of biomarkers of whole-grain intake. These metabolic studies have been complemented with qualitative studies investigating acceptance of, and barriers to consumption of wholegrain foods. In addition to his research role, Chris is an academic leader in the University, as Degree Programme Director for the BSc programme in Food & Human Nutrition. He teaches a wide range of subjects centred on nutrition and food science. Outside the University Chris is a member of the Nutrition Information Network of Healthgrain, an FP6 Integrated Project ‘Exploiting bioactivity of European cereal grains for improved nutrition and health benefits’. He is an advisor to several large food companies and has been a programme assessor for the Food Standards Agency, a referee for the BBSRC, MRC and Wellcome Trust. Chris is currently Honorary Scientific Development Officer of the Nutrition Society and Supplements Editor for the British Journal of Nutrition.
